TOMATO POTATO GALETTE
Preheat oven to 400 degrees Fahrenheit.
- 5 medium potatoes washed and grated and drained
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3 cloves garlic, crushed
- 1 teaspoon fresh thyme
- 1 tablespoon vinegar
- 1 large egg
- 2 tablespoons olive oil, divided
Mix together the grated potatoes, salt, pepper, garlic, thyme, vinegar, egg
and 2 tablespoons of the olive oil and pat into a 9-inch pie pan or 9-by-13
dish. Bake 30 minutes.
- 2-3 large firm tomatoes, sliced
- 3 ounces feta (or chevre) crumbled
- 10 basil leaves cut into 1/4-inch strips
Arrange over top of baked potato mixture. Cook another 15-20 minutes. Cool
for 5 minutes, then serve.
