Green Tomato Chutney

Combine all of the ingredients n a large, heavy-bottomed, non-aluminum saucepan. Place over medium heat and stir until the sugar is dissolved. Increase heat and cook briskly for 25 minutes, stirring often to prevent the mixture from sticking to the bottom of the pan. Ladle into hot sterilized jars, filling to within ½ inch of the top. Cover with clean lids and process in a boiling water bath for 15 minutes. Cool, label, and store.
